Autumn just begin and all I can think of is pumpkin, sweet potatoes, apples, cinnamon, maple and pecans and how am I going to make tons of fall inspired food and desserts!!! Wish me luck!

But for now I am going to start with sweet potatoes. I have been keeping 3 sweet potatoes in my pantry for more than 3 weeks just waiting autumn to arrive and prepare them as dessert.
Well autumn is finally here and yesterday I finally cut those sweet potatoes and make them into fries, I didn’t know how the recipe will turn out the only thing that I knew for sure was that I wanted them with a cinnamon-maple-pecan combination. Well I have to tell you that they turn out exquisite and I just cannot wait to share the recipe with all of you.
They are perfect, sweet, spiced, warm, and you can serve them as a breakfast, afternoon snack or as healthy dessert, I just love them.
I also love how easy this recipe to make is plus it requires a minimum of ingredients and take no more than 25 minutes to be ready!!

What do you need to make sweet potato fries? -Sweet potato - Olive or coconut oil - Coconut sugar - Cinnamon - Maple syrup - Pecans - Almond ricotta Note: - If you don’t have either olive or coconut oil you can use some melted butter instead. - If you don’t have maple syrup you can use honey or agave syrup. - Almond ricotta is optional and merely for garnish so you can use it or skip it! As you see, the list of ingredients is minimal but you won’t believe how amazing this recipe is!

How do you do the brown sugar cinnamon sweet potato fries? - As I mention before, this recipe is really pretty simple to make, first you need to peel sweet potatoes and cut them into French fries, then you will place the SP fries into a bowl and toss with oil and sugar-cinnamon mixture, preheat the oven and roast them into a sheet pan. For the garnish you will chop some pecans and toast them in the oven for a couple of minutes, you will use them along with some maple syrup and almond ricotta crumbs when sweet potato fries are baked and ready to serve.

Recipe
Ingredients
- 3 sweet potatoes
- 2 Tbs. olive oil or melted coconut oil
- 2 Tbs. coconut sugar
- 1 tsp. ground cinnamon
- ¼ cup chopped pecans
- 2-3 Tbsp. maple syrup
- almond ricotta or goat cheese (if not vegan)
- star anise (for garnish)
Instructions
1. Preheat oven to 400 F degrees.
2. Toast chopped pecans for about 5 minutes or until fragrant and toast. Reserve for garnish
3. Peel and cut sweet potatoes into fry’s size, place them into a big bowl and toss them with olive oil, coconut sugar and ground cinnamon.
4. Place sweet potato fries into a greased baking sheet and bake for 15-17 minutes. Do not over bake them otherwise you will end up with a mushy fries.
5. Place baked sweet potatoes into a serving plate and garnish with toasted pecans, maple syrup and almond ricotta.
6. Enjoy!!!

En verdad no podrás creer que algo tan sencillo quede tan delicioso Estos camotes horneados son una combinación saludable y deliciosa entre dulce y especias que bien podrás comerlos como desayuno, merienda de la tarde o como postre saludable acompañados de té o café.

El otoño acaba de empezar y yo en lo único que puedo pensar es en calabazas, camotes, manzanas, canela, nueces y maple, habrá que ver que tan creativa me pongo en la cocina y espero antojarlos tanto que les den ganas de cocinar! Por lo pronto voy a empezar con una receta de camotes horneados, no les miento tengo más de 3 semanas con estos camotes en mi despensa esperando a que llegara el otoño y preparar algo delicioso con ellos. Esta vez me fui por una receta sencillita que no toma más de 30 minutos en elaborarse de principio a fin, me encanta que requiere mínimo de ingredientes y todos son accesibles!

- Camotes
- Aceite de olivo o aceite de coco
- Azúcar de coco o azúcar morena
- Canela pura molida
- Nueces tostadas
- Miel de maple
- Queso ricota de almendras (es para decorar así que es totalmente opcional)
- Estrellas de anís (las use solo de decoración así que son opcionales)

Receta
Ingredientes
- 3 camotes medianos
- 2 cucharadas de aceite de olivo o aceite de coco
- 2 cucharadas de azúcar de coco o azúcar morena
- 1 cucharadita de canela pura molida
- ¼ de taza de nueces picadas
- 2 cucharadas de miel de maple
- ricota vegano de almendras y estrellas de anís para decorar
Instrucciones
1. Precalienta el horno a 200 C.
2. Coloca las nueces picadas en una charolita y tostalas por 5 minutos en el horno caliente.
3. Pela y corta los camotes en forma de francesas, una vez cortados colócalos en un tazón grande y mézclalos con el aceite, azúcar de coco y la canela.
4. Coloca las francesas de camote sobre una charola para hornear y hornea de 15-17 minutos. Ten cuidado de no sobre cocer, porque los camotes quedaran aguados y se pueden desbaratar.
5. Coloca los camotes cocidos sobre un plato o tabla para servir. Decóralos con miel de maple, nueces tostadas y ricota de almendras.
6. Disfruta!!!
