Muffins de Naranja Sanguina y Miel

Estos muffins o mantecadas de naranja sanguina y miel llevan la perfecta combinación de sabor, lo agridulce de las naranjas a juego con la miel de abeja que son una Delicia al paladar y una textura suave entre muffin y pastel, así que aquí tendrás sabor y textura perfectos garantizado.
Es temporada de Naranjas Sanguinas, aquí donde vivo, y amo estas naranjas, las has probado alguna vez?
Estas Naranjas a parte de ser visualmente súper atractivas, tienen un sabor riquísimo.
Tienen un color entre rojizo y naranja quemado, de ahí les viene el nombre de naranjas sanguinas, haciendo un poco referencia al color de la sangre.
Y si nunca las has probado, te voy a describir en dos palabras su sabor, Naranja-frambuesa y para algunos Naranja-Cereza. Te da una idea, ¿no? Lleva notas del sabor de la naranja tradicional, pero a su vez notas frutales y florales como de frambuesa, es un sabor súper rico, yo de verdad me considero muy fan del sabor y su color es irresistible.
Llevaba días y días pensando en que postre o pan preparar con un montoncito de naranjas que tenia en el frutero, y al mismo tiempo muriendo de miedo de que no llegaran vivas al día de hornear, es que de verdad en casa vuelan. Y bueno entre tanto dar vueltas a las ideas se me antojo preparar unos muffins de naranja, miel y coco.
Los muffins son una opción rápida y aligerada para hornear, me gusta que se hornean rápido y no tienes que preocuparte por decorarlos si no quieres, ellos son naturalmente bellos.
Aparte de que son muy fáciles y prácticos de guardar o incluso regalar.
Con ellos no hay rollos de decoración, ni rollos de partir un pastel y terminar haciendo un desastre en la cocina.
Hablemos un poco mas de los Muffins…
Estos muffins libres de gluten son suavecitos y húmedos, con un sabor marcado a naranja y notas tenues de miel, mientras que la textura del coco rallado les da un toque sin duda especial, son súper ricos, no sabes la ilusión que me hace estar escribiendo la receta y pensar en que un día vas a estar leyendo y preparando esta receta.
Como ya lo menciono un poco arriba, estos muffins son muy sencillos de preparar, no necesitas batidora ni ningún instrumento de cocina elegante. Basta con usar un par de tazones y un batidor de globo, (que incluso un tenedor puede fungir la tarea).
La preparación es cosa de 10 minutos, justo el tiempo en el que se va a precalentar tu horno, y el tiempo de horneado va de 20-25 minutos. Y lo increíble y delicioso con los muffins es que pueden disfrutarse recién saliditos del horno, así que nos ahorramos tiempo de enfriar y decoración, lo cual los convierte en un panecito perfecto para hornear en una tarde relajada o bien demasiado acarrerada.
Hablemos de los ingredientes…
Estos muffins están hechos a base de un blend de harina sin gluten y 3 ingredientes principales, naranjas sanguinas, miel, y leche de coco.
Pero como se que algunos de estos ingredientes pueden no estar a tu alcance o disponibilidad, me quiero asegurar de dejarte unas notas aquí abajo por si necesitas cambiar algún ingrediente.
Naranjas Sanguinas: Se que el ingrediente principal de la receta son las naranjas sanguinas pero se también que no son unas naranjas fáciles de encontrar en todas partes, entonces pensé decirte que no tienes nada de que preocuparte, simplemente cambia la cantidad requerida de naranjas sanguinas, por las naranjas que tu tengas a la mano. Y si bien es cierto que el sabor y color no serán exactamente los mismos, ten en cuenta que siguen siendo naranjas y su sabor es delicioso.
Harina sin gluten: Quise hacer esta receta sin gluten principalmente porque me gusta tener opciones en el blog por si estas buscando de un buen pan y tu estilo de vida o intolerancias no te permiten el gluten y también porque en casa tratamos de consumir repostería sin gluten entre semana e incluso libre de granos y nos reservamos los deliciosos panes con gluten para los mimos del fin de semana.
Pero al mismo tiempo quiero que esta receta sea flexible y se adapte a ti y a tus ingredientes, y que si tu no estas llevando un estilo de vida donde te limites de gluten, igual puedas disfrutar de la receta, así que si quieres preparar esta receta con harina de trigo simplemente deberás cambiar una harina por la otra, sin necesidad de cambiar las porciones.
Leche de coco: Esta receta es libre de lácteos, y en lugar de leche de vaca eh utilizado leche de coco,(pero puedes utilizar la leche vegetal que tengas en casa). Pero si tu no eres intolerante a la lactosa o vegano, puedes sustituir la leche de coco por leche de vaca a mismas cantidades.
Huevos: Esta receta si lleva huevitos, pero si por algo tu no estas consumiendo huevos o si por algo simplemente no tienes huevos en casa, esto no será un problema, puedes sustituir la cantidad de huevos por ¼ de taza de yogurt o por puré de manzanas. Ya veras que funciona de maravilla.

El Glaseado…
Ufff, este glaseado de naranja sanguina le va de maravilla a los muffins, es que, si ya de por si son perfectos, el glaseado les da un toque mágico!
No es obligatorio, pero si altamente recomendado!!
Además de que les dará a los muffins un toque mágico, los ayudara a conservarse frescos por mas días. Y lo mayor de todo es que te tomara solo 1 minuto hacerlo, increíble no?

Muffins de Naranja Sanguina y Miel Libres de gluten
Estos muffins de Naranja Sanguina y Miel y además libres de gluten son suavecitos y húmedos, con un sabor marcado a naranja y notas tenues de miel, mientras que la textura del coco rallado les da un toque sin duda especial, son súper ricos.

Ingredientes
para los muffins
2 tazas de harina sin gluten (puedes sub por harina de trigo si no tienes intolerancia)
¼ de taza de azúcar de cana
1 ¾ de cdita de polvo para hornear
½ taza de aceite vegetal
¼ de taza de jugo de naranja sanguina (puedes substituir por cualquier variedad de naranja)
2 cditas de ralladura de naranja
½ taza de leche de coco
1 cdita de vinagre blanco
¼ de taza de miel de abeja
¾ de taza de coco rallado sin azúcar
Glaseado de Naranja Sanguina
1 taza de azúcar glass
1 Cda de jugo de naranja sanguina
1-2 cditas de leche de coco
Para decorar:
4 rodajas de naranja cortadas en triángulos.
¼ de t de glaseado de naranja sanguina
Instrucciones:
1. Precalienta el horno a 180 C grados centígrados. Prepara un molde para muffins con papelitos.
2. En un tazón grande combina la harina, azúcar, sal y polvo para hornear.
3. En un tazón mediano, coloca el aceite, la leche, el vinagre, el jugo de naranja, los huevos, la ralladura de naranja y la miel. Mezcla con un batidor de globo o con un tenedor, bate bien hasta que todo este bien integrado. Vierte esta mezcla sobre la mezcla de harina y azúcar y bate suavemente con una espátula hasta que todo se integre perfectamente. Por último agrega el coco y mezcla solo a integrar.
4. Divide la masa en el molde de muffins, (a mi me salieron 16 muffins medianos).
5. Lleva los muffins al horno y hornea por 20-25 minutos o hasta que los muffins estén firmes y doraditos de la superficie.
6. Una vez horneados, puedes dejarlos enfriar sobre una parrilla de enfriado antes de decorar con el glaseado o bien decorarlos tibios.
Para hacer el glaseado
1. En un tazón pequeño, mezcla 1 T de azúcar glass con 1 cucharada de jugo de naranja y 1-2 cucharaditas de leche de coco.
Si la mezcla aun esta muy densa, agrega un poquito mas de leche.
Decora los muffins 1 cucharada de glaseado y un pedacito de naranja.

Gluten-Free Blood Orange Honey Muffins
It’s blood orange season and I was waiting to make some deliciousness with some oranges left on my fridge. I was also worried I would end up eating them because I am a little too obsessed with blood oranges
But good news there are muffins!!! this meaning I didn’t eat all the oranges, lol.
So, let’s talk about Muffins!
These gluten free blood orange honey muffins are the perfect combination of a cakey-muffin texture, they are soft and they are moist bust most of all, they are so so good!
These muffins are so easy to make, they are made with the quick bread method which basically means that you mix all dry ingredients together into one bowl and then all the wet ingredients onto another bowl until well mixed to finally combine both mixtures together.
This being said you can either make the muffins using a stand mixer or using 2 bowls and one whisk.
I have to be honest with you and for some reason I do love simple recipes that can be made using bowls and whisker instead of stand mixer or mixer. It just feels easy, simple and quick, even though you end up taking the same amount of time and cleaning in both ways!
Let’s talk about the ingredients…
These muffins are primarily made with blood oranges and a gluten free flour blend, and they are also dairy free. Since I am using eggs this recipe isn’t vegan.
But I want to let you some notes below so you can have options and feel free to do it your way, because at the end of the day my idea is that you can understand how to bake so you can feel comfortable by doing changes if you need to.
*Gluten free flour blend: As I mentioned above, I made these muffins gluten free, but if you don’t have a preference for gluten-free baking and since I used a 1-1 gluten free blend, you can switch to all-purpose flour if you like. No need to make any adjustments into the quantities, just substitute gluten free flour for the exact same quantity of all-purpose flour.
*Blood Oranges: I used blood oranges to make this recipe but since blood oranges are not common everywhere and they are a seasonal fruit, you can substitute or use any kind of oranges you have near to you, and I promise you the muffins will still taste amazing!
*Coconut milk: I used coconut milk for this recipe so it can be dairy free, but feel free to use dairy milk if is the one that you are used to use. (Also, if you want to keep the recipe dairy free but don’t have any coconut milk on hand, feel free to use any plant-based milk you have.).
*Eggs on the recipe: You got it, this recipe isn’t vegan since I am using eggs and honey for the recipe, but this can be easily fixed just by substituting the eggs in the recipe. So, if you happen to prefer an egg-free recipe, substitute 2 eggs with ¼ cup of vegan yogurt or apple sauce.
*The note for honey: I haven’t tried the recipe substituting the honey on the recipe so I cannot help you on this one.
The glaze…
Well the truth is, glaze always make things better! So, if you agree on this one, you should definitely make the glaze and glaze your muffins!
The glaze is so easy to make, and it takes just one extra ingredient beside from your main ingredient list.

Into a small bowl, place 1 cup powder sugar, then add blood orange juice and coconut milk and mix until combined. Add more milk if is too dense. Garnish the muffins with 1 Tbsp glaze and 1 piece orange. To storage the muffins… *You can keep them into an airtight container over the countertop for 2-3 days. *You can keep them in the fridge for over a week and storage into an airtight container.
